Mmmm. Nothing says summer like a berry-stained smile. And with the great price on blueberries these days, there’s no reason for not enjoying summertime treats like this one, below. This recipe–straight from my mom’s recipe box–was one of my very favorite breakfasts (and lunches and dinners) as a kid.
Buckle Batter:
2 cups blueberries
3/4 cup sugar
1/4 cup Crisco
1 egg
1/2 cup milk
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
Streusel Topping:
1/2 cup sugar
1/3 cup flour
1/2 tsp. cinnamon
1/2 stick margarine, softened
Instructions:
Preheat oven to 375, and coat a 9 x 9 in. square pan with cooking spray.
In a mixing bowl, fold together all buckle batter ingredients, being careful not to crush blueberries.
In a separate bowl, combine streusel topping ingredients, slicing with two knives (or a pastry blender) until small chunks form.
Pour batter into prepared pan. Spoon streusel topping on top of unbaked batter.
Bake for 45-50 minutes, until buckle tests done with a toothpick.
